MATT Moran's Paddock to Plate is a show by foodies, about foodies and for foodies.
As its name suggests, the new original series follows Moran as he explores various food regions on the east coast, meeting local producers and cooking with their food.
"I'm the facilitator," Moran told The Guide.
"The real stars of the show are the producers who do it for the love of it. They're very passionate about what they do and it shows on screen."
From snail farmers to rare pig breeders and Brussels sprout growers, the colourful characters Moran meets have some unusual and unique food to offer him.
He believes a growing number of Aussies want to know where their food comes from and to connect with local organic farmers.
"People's food knowledge has changed," Moran said.
"They want to know where it came from, if it's sustainable and who nurtures it.
"I've been in this industry for over 25 years and my food knowledge is better than most, but the amount of stuff I learned was unbelievable."
But it wasn't all traipsing through paddocks in gum boots. Moran went diving for abalone and faced his fear of bees, thanks to a severe allergy, to collect honey.
"I've only ever been bitten by a bee once and I ended up in hospital; I was pretty damn sick," he said.
"It's one of those things. I wanted to do it. I knew I was pretty safe."
With sweeping shots of the Yarra Valley, the Great Ocean Road and Byron Bay, Moran says Foxtel executives are calling Paddock to Plate pay TV's prettiest show ever.
But matching the scenery for beauty are Moran's culinary creations, from the delicate citrus-cured Yarra Valley salmon and caviar with baby beetroot to buttermilk pancakes with caramelised pears.
Moran even manages to make Brussels sprouts look delicious.
He says it's the show he always wanted to make.
"I'd done five or six different reality TV shows before MasterChef and don't get me wrong, I'm eternally grateful for what those shows have done," he said.
"I probably wouldn't be in a position to do my own show (without them), but my time was up and I wanted to do something that was more in tune with what I did.
"I wanted to cook; I'm a cook at heart. I love cooking.... I'm incredibly proud of it. If I never make another TV show then I'm happy."
But, of course, he is hopeful of a second series of Paddock to Plate.
"If we do a second series, someone mentioned barramundi fishing from a helicopter. I'd love to do that."
