Lemon / Lime Slice
5 medium eggs
11/2 cups caster sugar
2/3 cup freshly squeezed lime OR lemon juice
zest of 1 lime OR lemon
85g plain flour
pure icing sugar, to dust
4 tblspn caster sugar
150g plain flour
130g chilled butter, cut into rough cubes
Preheat oven to 160°C. Grease a 26cm x 18cm slice tin.
To make base, place flour and sugar in a food processor and mix briefly.
Add the chilled butter and process until combined and the pastry starts to form a ball.
Press dough into greased tin and bake for 15-20 minutes at 160°C.
While base is cooking, mix eggs and sugar until combined.
Stir in lime or lemon juice, zest and sift in flour.
Beat until combined.
Remove base when cooked, and lower oven temperature to 150°C.
Pour topping mixture onto base and return to oven for 30-35 minutes, until top is puffed and golden.
Cool and dust with sifted icing sugar, then cut into squares.
