Chef offers locals a taste of Sydney

Top Sydney chef Peter Conistis with event sponsor John Welch from Optus World Lismore. Peter was in Lismore recently to check out local produce and talk to suppliers before setting the menu for the Lismore Feast in September.

The pioneer of modern Greek cuisine, Peter Conistis, will be guest chef at the Lismore Feast this year and hes inviting local apprentices and trainees to work with him in the kitchen for the night.

Peter owns Omega Restaurant in Sydney named best new restaurant in the Sydney Morning Herald Good Food Guide and was in Lismore last week to scope out facilities and produce for this gourmet feast under the stars.

Peter said he was bringing his sous chef and a junior with him, and locals who joined him would learn his unique style.

I basically created modern Greek, he said. Fifteen years ago it had never been done. For example we do a greek salad. But its served in a martini glass with sheeps milk fetta bavarois, cucumber jelly, candied olives and a tomato sorbet. Its all the ingredients of a greek salad but not. Ive basically reconstructed greek food.

Peter said he had wanted to do NORPAs Lismore Feast because so much of the produce he used at Omega came from the Northern Rivers Bangalow pork, Casino veal and rabbits from Kyogle.

So Ive come to where its all produced, he said. For me its a way to thank everybody for what weve been using.

The Lismore Feast is held in the grounds of Lismore City Hall on September 9 and the scrumptious dinner is served with wines by De Bortoli. Tickets cost $120 and can be bought from or from the Northern Rivers Ticket Centre on 6621 5600.
